There are plenty of books available about sustainable living, organic gardening, seasonal cooking and permaculture and they will all help crofters. On the other hand, if you would like to know more about voluntary simplicity, becoming self-reliant and making do with less, I recommend ‘Extreme Simplicity’ by Christopher and Dolores Lynn Nyerges because it’s the best book I’ve read on the subject

RECIPE OF THE MONTH
TOFFEE APPLE TOAST
If you have to, you can buy apples to make this tea time treat but at this time of year, it’s worth looking for Wilding Apple trees that grow in hedgerows, along disused railway lines or in forgotten corners of gardens. Ask permission before harvesting fruit which is growing on someone else’s property. Wilding Apple trees are garden varieties that have been neglected or have grown from a carelessly discarded apple core.
Ingredients
1 ounce (25g) of butter
1 – 2 tablespoons of honey, syrup or sugar
2 - 4 peeled, cored apples (the number depends on the size & condition of the fruit)
2 slices of bread
Method
- Put the apple peel in your compost bin but bury the cores for the next generation of Wilding Apple trees.
- Cut the apples into slices.
- Melt the butter in a saucepan and when it begins to sizzle, add the apples.
- Turn the heat down a little and stir the apples around in the butter until they start to soften.
- Add the honey, syrup or sugar and stir frequently.
- After a few minutes, the apples will be coated in a toffee sauce which will be VERY hot.
- Remove the pan from the heat and while the mixture cools, toast your slices of bread.
- Spread the Toffee Apples over the toast and eat.
